Thai Chicken Soup


Ingredients:-
  • Boneless chicken 1/2 kg.
  • Chicken broth 7 cup.
  • Lemon grass stalk 1.
  • Kaffir limes leave 1.
  • Shiitake mushrooms cut in slices 1 cup.
  • Ginger piece 2 inch cut in slices.
  • Red chilies 1-3.
  • Salt 1 tea spoon.
  • Dried crushed chili 1/2 tea spoon.
  • Coconut milk 1 can.
  • Lemon juice 2 table spoon.
  • Fish juice 2 table spoon.
  • Brown sugar 1 table spoon.
  • Fresh coriander leaves 1 cup.
  • Fresh basil leaves 1 cup.
  • Cherry tomatoes 1 cup cut in to slices.
  • Potato 1 cut in slices and boil.
  • Green onion 3 cut into slices.
  • Boiled noodles 1 packet.
How to make:-

  1. Cut the chicken into cubes.
  2. Cut the slice and mince the lower portion of the lemongrass stalk.
  3. Retain the upper stalk for the soup pot.
  4. Take a large pan and boil the chicken broth.
  5. Add mushrooms slices,lemon grass,kaffir lime leaves and fresh chili and cook on low heat until chicken is tender.
  6. Add ginger,coconut milk,brown sugar,fish sauce,potato,dry chili,tomato,salt and cook for 3 minutes.
  7. Turn heat down and stir lemon juice.
  8. Pour the soup in a serving bowl and sprinkle a little fresh coriander,basil and green onion.
  9. Pour boiled noodles in another bowl.
Serve hot:-
