Ingredients:-
- Boneless chicken 1/2 kg.
- Chicken broth 7 cup.
- Lemon grass stalk 1.
- Kaffir limes leave 1.
- Shiitake mushrooms cut in slices 1 cup.
- Ginger piece 2 inch cut in slices.
- Red chilies 1-3.
- Salt 1 tea spoon.
- Dried crushed chili 1/2 tea spoon.
- Coconut milk 1 can.
- Lemon juice 2 table spoon.
- Fish juice 2 table spoon.
- Brown sugar 1 table spoon.
- Fresh coriander leaves 1 cup.
- Fresh basil leaves 1 cup.
- Cherry tomatoes 1 cup cut in to slices.
- Potato 1 cut in slices and boil.
- Green onion 3 cut into slices.
- Boiled noodles 1 packet.
How to make:-
- Cut the chicken into cubes.
- Cut the slice and mince the lower portion of the lemongrass stalk.
- Retain the upper stalk for the soup pot.
- Take a large pan and boil the chicken broth.
- Add mushrooms slices,lemon grass,kaffir lime leaves and fresh chili and cook on low heat until chicken is tender.
- Add ginger,coconut milk,brown sugar,fish sauce,potato,dry chili,tomato,salt and cook for 3 minutes.
- Turn heat down and stir lemon juice.
- Pour the soup in a serving bowl and sprinkle a little fresh coriander,basil and green onion.
- Pour boiled noodles in another bowl.
