Ingredients:-
- Boneless chicken 1 kg.
- Cherry tomatoes 1 kg.
- Mayonnaise 1/ 2 cup.
- Panko bread crumbs 2 cup.
- Chopped almonds 2 cup.
- Chopped tarragon leaves 1 table spoon.
- Salt 1-1/4 tea spoon.
- Black pepper powder 1-1/2 tea spoon.
- Red pepper powder 1 tea spoon.
- Mustard powder 1/2 tea spoon.
- Coriander powder 1 table spoon.
- Lemon juice 1 table spoon.
- Cut the chicken in 4 by 6 inch pieces.
- Take a deep plate and combine the bread crumbs,almonds,1/2 tarragon.
- Marinate the chicken with mayonnaise,salt,red and black pepper powder,coriander powder,mustard powder ,then coat in panko coating each side.
- Place it in refrigerator for 15 minutes.
- Grease the oven try and bake the chicken for 20-25 minutes each side.
- Cut the tomatoes in half and put in a bowl.
- Add olive oil,1/2 tarragon,lemon juice,1/4 tea spoon salt,1/2 tea spoon black pepper .
- Toss to coat and set aside.
- Place the chicken in serving dish and top with tomato salad.
