Ingredients:-
- Dill 1 kg in small pieces.
- Gurda 1/2 kg in small pieces.
- Brain 3.
- Chopped onion 4.
- Garlic paste 1 table spoon.
- Ginger paste 1 table spoon.
- Chopped green chili 1 tea spoon.
- Tomato 5 in small pieces.
- Fresh coriander leaves 1/2 bunch.
- Lemon 2 in slices for garnish
- Green chili 2 for garnish.
- Salt 1-1/2 tea spoon.
- Red pepper powder 2 tea spoon.
- Mustard powder 1/4 tea spoon.
- Coriander powder 1 table spoon.
- Garam masala 1 tea spoon.
- Oil 2 cup.
- Butter 1 cup.
- Olive oil 1/2 cup.
- Take the half pan of water and boil dill in it.
- Drain and wash the dill well.
- Take the water in the pan and boil the gurda in it.
- Drain and wash the gurda.
- Heat the oil in a big pan and fry the chopped onion for 5 minutes.
- Add garlic and ginger paste and fry for 3 minutes.
- Add chopped green chili and tomato and cook for 5 minutes.
- Add dill,salt and cook for 6-8 minutes.
- Add red pepper,mustard powder and cook until it leave oil.
- Add some water and cook for 20-25 minutes on medium to low heat.
- Add the gurda in it and cook for 20-25 minutes or until it tender.
- If you need you can add some more water.
- Wash the brain well and fry in 1/2 cup of olive oil for 5 minutes and add in the dill gurda .
- Add the butter and coriander powder and stir gently.
- Cook on high heat until it leave oil,then keep for 5 minutes on low heat.
- Pour in a serving bowl and sprinkle over the garam masala.
- Garnish with coriander leaves,lemon and green chili.
