Ingredients:-
- Basmati rice 1/2 kg.
- Olive oil 1 cup.
- Peas 1 cup.
- Potato in cubes 1 cup.
- Carrot in small pieces 1.
- Egg 2.
- Onion in slices 1.
- Garlic paste 1 tea spoon.
- Ginger paste 1 tea spoon.
- Chopped green chili 1 tea spoon.
- Chopped tomato 1 cup.
- Fresh coriander leaves 1/2 bunch..
- Fresh mint leaves few.
- Salt 1/2 tea spoon.
- Red pepper powder 1/2 tea spoon.
- Garam masala 1 tea spoon.
- Peanut 1/2 cup.
- Wash and soak the rice for 15 minutes.
- Take a big pan and heat the oil.
- Add onion and fry for 3 minutes or until golden brown.
- Add garlic and ginger paste and fry for 2 minutes.
- Add tomato paste and cook for 3 minutes.
- Add peas and some water and cook for 10 minutes.
- Add tomato and carrot slices and cook for 5 minutes or until potato and carrot tender.
- Add salt,red pepper powder,garam masala,green chili,coriander and mint leaves and fry for 2 minutes,then set aside.
- Beat the eggs with 1 pinch of salt and set a side.
- Boil the rice in water and drain them.
- Mix vegetables in the rice and mix them.
- Cook the rice for 5 minutes on low heat .
- Pour the rice in a serving dish and sprinkle over the peanut and garnish with fry eggs.
