Sweet and Tangy Apricot Chicken with Pineapple

apricots. By replacing a few servings of fresh fruit a week with smaller portions of dried fruit, you can work to increase your intake of dietary fiber, potassium, iron, and antioxidants.Pineapples contain high amounts of vitamin C and manganese.Prevent cancer and heart disease: Honey contains flavonoids, antioxidants which help reduce the risk of some cancers and heart disease.This is a healthy dish and have a good taste.
It is for 5 serving and will be ready in 40 minutes.

  • Boneless chicken  into cubes 1/2 kg.
  • Chopped celery 1 cup.
  • Chopped carrot 1 cup.
  • Crushed garlic 1 tea spoon.
  • Crushed ginger 1 table spoon.
  • Chopped green chili 1 tea spoon.
  • Cumin powder 1 tea spoon.
  • Salt 1 tea spoon.
  • Black pepper powder 1 tea spoon.
  • Olive oil 1/2 cup.
  • Butter 1 cup.
  • Honey 2 table spoon.
  • Water  1-1/2 cup.
  • Steamed green round beans 1 cup.
  • Dried apricots  1/4 cup.
  • Potato into cubes 1 cup.
  • Peas 1 cup.
  • Pineapple slices 1 cup.
How to cook:-
  1. Take the fry pan and heat the oil.
  2. Add chicken cubes and fry for 3 minutes and transfer in the bowl.
  3. Add the celery and carrot in the fry pan and cook for 5 minutes,then add salt,garlic and ginger ,cumin powder and cook for 5-7 minutes.
  4. Add the potato cubes,peas,dried apricot,water and cook on medium to low heat until tender.
  5. Stir in the chicken,steamed green round beans and black pepper powder and cook for 10 minutes on low heat.
  6. Stir in the butter and honey and cook until butter dissolve.
  7. Pour in the serving bowl and garnish with pineapple slices.
